Applesauce Cake
Cream together 2 cups sugar and 1 cup butter. Add 1&1/2
cups applesauce, 1 tablespoon soda dissolved in hot
water, 1 tablespoon each cinnamon and vanilla, 3 cups
flour, 1 cup raisins and 1/2 cup nutmeats. Bake in a
loaf cake tin.
Cottage Cheese Cake
Mix together well 1 pint sweet milk, 1 cake compressed
yeast and stir this into 2 quarts sifted flour. Mix
well and set in a warm place to rise. When light add
1/4 cup butter, 1 cup sugar, 1 teaspoon salt and let
stand 2 hours. Then work this down and let rise 1&1/2
hours. Put in a buttered pan, spread butter on top and
let rise 20 minutes. Then cover with cheese mixture
which is made as follows: In 1 pound cottage cheese mix
2 beaten egg yolks, 2 tablespoons corn starch, sugar to
taste, grated rind of 1 lemon, 2 teaspoons vanilla.
Spread this on to of the cake and bake 30 minutes in a
quick oven. Cinnamon can be used for flavoring if
desired, placing it on top of the cheese.
Jam Cake
Cream together 1&1/2 cups sugar and 1 cup butter. Add 2
well beaten eggs, 1 teaspoon each of cinnamon, allspice
and cloves, 1&1/2 teaspoons soda dissolved in 14
tablespoons of sour milk. Use any kind of fruit jam and
enough cake flour to make a proper dough, usually about
2 cups. Bake in a loaf tin.
Sausage Cake
To 1 pound sausage add 2 cups sugar, 1 cup raisins, 1
cup warm coffee, 1 teaspoon each ground cloves,
cinnamon, allspice, nutmeg, 3/4 cup chopped nutmeats, 1
teaspoon soda sifted in 2&1/2 cups flour. Bake in slow
oven.
Pork Fruit Cake
The following is an excellent recipe: 1/2 cup butter,
3/4 cup brown sugar, 3/4 cup seeded raisins, 3/4 cup
English currants, 1/2 cup citron cut in thin bits, 1/2
cup molasses, 2 eggs, 1 cup chopped fat fresh pork, 1/2
cup sour milk, 2 cups flour, 1/2 teaspoon soda, 1
teaspoon cinnamon, 1/2 of allspice , mace, cloves, and
lemon extract, 1 cup chopped figs. A few rich preserves
add to the cake, Cream the butter well and add the sugar
gradually, beating constantly, Then add yolks of eggs
well beaten. Next add all the liquids and follow with
the flour. The flour should be well sifted with the soda
and spices sifted added. Beat the mixture thoroughly to
secure a fine grain and then add the well beaten egg
withes. Then fold in the fruits, this prevents the fruit
from going to the bottom of the batter. Bake in 2 small
loaves in a slow oven.
